Lower-Fat *Secret* Banana Bread

This is a pic of the banana bread I tested for Isa & Terry’s new book. Is was *fab* let me tell you!

Pasta with Vodka "Cream" Sauce

On Sunday, my mom and my little brother came over to Matt and my apartment for a visit. It was really nice. I love having people over, especially when I can cook for them! We had a wonderful lunch, consisting of: pasta with Nancy’s Vodka “Cream” Sauce, salad with lots of goodies in it (bought pre-made from Trader Joes), rolls and cantelope. I forgot to take a pic of the entire spread since my mom was over. whoops! You’ll have to just “picture it”, I guess. :]

The pasta sauce was sooo good, I can’t even begin to tell you. Maybe I loved it so much because this was my first time making pasta sauce. Usually we just buy the jarred kind. Also, I have never tried a sauce with so much flavor. Plus, it was super fancy with the addition of vodka…or atleast I thought so! I think I am going to make a ton of this stuff this next weekend and freeze it for later use.

Oh, and I forgot to mention, I started school last week…and this year I am a SENIOR at ASU! woo-hoo! I am so glad and I already feel so accomplished…even though I haven’t graduated yet! Even though school has started, I am still trying to make almost all of our meals, with a little help from some frozen stuff every now and again.

Also, Matt and I have a new rule–we can only eat out once a week. Last night we ate at Udupi Cafe. It’s an Indian food place that is entirely vegetarian with a good portion of the dishes being vegan. It was just as good as I remember it from last time! I love all of the wonderful spices in Indian food. Yum. It was also a lot more special, seeing how it was the only time that week when we ate somewhere besides home.

Cheesy Bean and Cheese Enchiladas

Tonight I made Cheesy Bean and Cheese Enchiladas, recipe courtesy of vegweb. Oh, boy they were yummy! They are definetly the best enchiladas I have ever made myself! Next time, though-I will top them with soy sour cream and guacamole like Nancy did when she made them.

On the side we had a fruit combo of bananas and kiwi and some blue corn bread made from a mix bought at Trader Joes.

Mmm…chocolate coated rice crispy treats. I found this recipe on the Post Punk Kitchen forums. [I added the chocolate coating to the recipe :)]



Southwestern-Style Salad and "Cheese" Sauce

What a great lunch today!! Yum. I made a simple Southwestern-Style Salad with: romaine,
chopped cherry tomatoes, avocado, green onions, black beans and crushed tortilla chips. I topped it with some Balsamic Vinaigrette. Ooooh boy. It was a refreshing way to start the 2nd half of the day!

Before the salad, however, I had some tortilla chips (whole ones) with Punkmommy’s Nacho “Cheese” Sauce and Pico de Gallo. I love
Oh, and of course I made another batch of Dreena’s Chocolate P-nut Butter Squares. I tried to cut them a lot smaller this time, so maybe I won’t eat so many in a day! My friend came over this past weekend and tried a square…let me tell you–she had a full blown food-gasm!

All I can say is WOW…these are sooo good. I think this recipe is tied with the Homestyle Chocolate Chip Cookie recipe for my favorite from Dreena’s Vive le Vegan.



Next Day Rice (or Other Grain) Patties

Well, Matt and I just returned from our trip to California (we stayed both in San Diego & the Laguna Beach area). We had a great time, except for the fact that we had to make a visit to the ER because Matt got beat up by the beach while boogie bording. :( Poor Matt! He’s ok now–thank goodness.

For our first meal back, I made these Next Day Rice (or Other Grain) Patties from The Everyday Vegan. I didn’t have leftover rice…so, I made some especially for this recipe. I chose this recipe because Matt likes veggie burgers made without soy. Soy seems to be giving him stomach troubles. Anybody else have this problem?

Anyway, these burgers were a hit and I will surely make them again soon. I loved the flavor the tahini and hoisin sauce give them. Yum! Thanks for another winner, Dreena!
