Well, I know I haven’t been posting much lately…but I have been super busy.

I have been cooking (a little bit) though. I paired my leftover polenta (ready-made from TJ’s) with BBQ tofu (Jess got me craving it) and it was super yummy. I also made roasted garlic mashed potatoes and I made the Creamy Ceasar Dressing from The Everyday Vegan. I looooove it. It works great as a dip for fries, pizza (Matt and I have to dip our crusts in something!) and ofcouse as a salad dressing. To me, it tastes like a mix between Ranch and Ceasar and I love the fact that it has a milder flavor.

Oh, and one of the things distracting me from cooking was going to the 30 Seconds to Mars concert with my buds Katie and Christine. We were in the front row! It was awesome.

Copycat Calzones

So, a couple of days ago I was browsing through Blogs and came to one of my favorite ones. Nancy had made calzones for her family…and it gave me a major craving! Matt and I always have Trader Joes’ ready made pizza crust on hand (Matt & I
Back in our omnivore days we loved ham and pineapple on our pies. I wanted to recreate our long lost love-so, I bought some Yves Veggie Ham and some canned pineapple. Matt did the rolling and tossing of the dough (as usual) and I did the sauce pouring and sprinkled on the toppings. They were delicious!

Oh, and I decided to go with a less healthy side. Nancy made some yummy salad-I went with some Salt & Vinegar chips and some Goddess dressing to dip my calzone in! Hey, I’m a college student, OK!



Grilled Veggie Sammy and Polenta

So today’s dinner was a simple sammy with: a grilled portabella mushroom, spinach, roasted red pepper, Veganasie, and mustard on whole grain bread. I know, it’s not anything special, but it’s easy and good! The real reason I posted today was because I need to know about Polenta. I got some ready-made in a tube at Trader Joe’s today, because I’ve been wondering about it. I just grilled up a few slices as a side to my sammy (not sure if polenta goes w/ sandwiches, but, oh well!). It’s was pretty good-but definetely needs something added to it or something.

So, what do you all know about polenta…and how do you use it?



Down Home Cookin’

Yum! I made such a good meal tonight! It’s my version of some down home cookin’. I made marinated tofu, roasted green beans, and mashed potatoes. The marinade was based on Dreena’s marinade for her Tasty Tofu Tidbits from The Everyday Vegan. It’s basically soy sauce, rice vinegar, and hot sauce (chipotle). It made the tofu taste awesome! Next time, I am going to add even more hot sauce to spice it up even more.

So, I have been really slacking in the cooking department lately. I have been so busy with school and work! Well, I did have time to try out the Potato “Chippers” from The Everyday Vegan by Dreena Burton. They were good and tasted like a mix between chips and french fries~my two favs!
